The extreme growth of winemaking in Armenia in last years could not avoid the usage of some special technologies. The newfrangeled usage of ancient Armenian technology of ageing wine in an amphora, called “karas” is being expanded. The thing, that may seem a simple commerce, gives birth to really unique wines. The head winemaker of “Voskevaz” winery, Jean-Paul Berger assures, that wine is a personality. As formation of a human can go this or that way, depending on environment, so is wine. Instead of fermenting grape juice in stainless stills, ancient amphoras can be used, and that will lead to unexpectedly beautiful results. Even size of the amphora can vary the ultimate taste of a wine. For instance, in “Zorah” winery there are amphoras of different sizes are used for ageing their “Yeraz” wine, half of them dug deep in the ground. Each of those amphoras gives some special aroma or taste, so in the final blend you get a wine of distinctive richness and complexity.
