Ararati (20%) is an indigenous white grape variety, is on the verge of extinction and no wine has been made from this variety so far. Sireni (80%) can be found in clay sedimentary soils. Both grape varieties are fermented separately in traditional Armenian karasses which are buried ¾ in the ground. The Ararati is with skin contact. They are then blended together and aged for about 2 years in karasses and rough concrete vats with no epoxy lining. A further 12 months in the bottle. A full bodied wine with grippy tannins and notes of black fruits pomegranate and liquorice.
