Hand harvested, selection of the best bunches on the vine and then berries on the sorting table. Full combing and delicate pressing. Cold maceration of the must. Fermentation with natural yeasts partly in temperature-controlled stainless steel tanks and 45% in oak barrels (less than 5% new). Aged 8 months in contact with fine lees, in the same tanks. After blending, the wine stands for a further 2 months.
